Tasty Tuesday – Taco Soup – with a twist!

I decided to share my Taco Soup recipe this week for Tasty Tuesday –

You may be asking, “why do so many of her recipes contain either chocolate,

or cheese, beans, and tortilla chips?

The answer is – I have a full time job in addition to taking

care of my little brown house and family!


I also have a husband and son that can be picky sometimes

in what they will or will not eat. Especially when it comes

to leftovers. So that all makes me a frugal, simple, and sneaky cook!

I’ll show you the sneaky twist at the end of the recipe!

(and I have no excuse for the chocolate except for my sad addiction to it…)

Please tell me I am not the only one out there too busy to cook gourmet – or I may

have to cry myself to sleep while devouring large amounts of chocolate..

Anyway….

I made this last weekend for a big family gathering I had here. I made up

a huge batch – as you can tell by the big stock pot I’m using!

( I am so in love with this stainless steel pan!)


I used almost 4 pounds of ground beef. For a normal batch I use about 1 pound.


Here is the ingredient line up –

2 cans mexican style stewed tomatoes

2 cans corn

2 cans whole pitted olives

2 cans kidney beans

1 package taco seasoning

1 package ranch dressing mix

Dump everything into the pot with the cooked ground beef.

I don’t usually use the entire package of ranch mix. I add to taste.

You may need to add some water, I drain the corn, beans, and olives

before I add them – so the only liquid is from the tomatoes.

As I read back over that, I feel the need to mention that “dump

everything into the pot” is probably not a proper cooking term..


So here it is – simple! We add tortilla chips, cheese, salsa -whatever.

My guys like it just like this – they can fix it up however they choose.


I like it with cheese and sour cream -


I usually freeze half of the soup to pull out at a later time.

Of course I have to disguise it so they don’t think they are being served leftovers!

When I pull it out a week or so later ,

I add sour cream and cheese before I heat it up

then I serve it as a queso dip with chips.


This is seriously so yummy! And when I get home late and need to throw

dinner together fast – it is perfect. Plus the fam thinks they are getting a treat!

And they never know it is recycled!

I am sure I have now secured my position as top gourmet blog chef

….the awards should come pouring in soon.

    I’m glad you posted this – I’ve wanted to make some ever since we were there a couple of weeks ago. And if you lived in my house, you would understand that left-overs aren’t even a part of our daily life cuz there are NEVER any left-overs to recycle!

    Oh, shoot. “Dump everything into the pot” was the one cooking term I finally mastered.
    I’m new to your blog…and looking forward to reading more/getting to know you. How bad can someone be with cooking skills like that?
