Tasty Tuesday – Lemon Blueberry Muffins
I just love taking pictures of food!! What is up with that? I also love eating it.. hmm…
Welcome to Tasty Tuesday at The Little Brown House. I decided to make muffins today –
it has been a long time since I’ve made some. And blueberries with lemon is a great combination!
You could substitute a different berry if you have something else on hand.
Here are the ingredients – not very many, it is a very simple recipe.
I’ll let you in on a little secret – almost every recipe I make I have a little handfull of
chocolate chips on the counter along with the ingredients. Even if they aren’t in
the recipe.. I can’t seem to open the pantry without getting a few to nibble on.
There you have it – one of my deepest secrets. I guess we are all BFFs now huh?
Anyhoo -
Start out by mixing the dry ingredients together in a bowl.
Flour, sugar, salt, and baking powder.
Mix together the wet ingredients in another bowl. Beat the egg and
add the melted butter, milk, lemon juice, and zest.
Now add the blueberries to the dry ingredients.
And combine the two -
Here is where you are supposed to barely stir them together -
I however obviously have no restraint… I always mix a little bit
to much and my muffins all have a bluish tint…. but I force myself to eat them anyway..
Now they are ready to go into the muffin tins!
Bake at 400 degree’s for 20 to 25 minutes -
While they are baking you make the glaze. What? You thought I was
making something healthy? Ha!
I know that looks like an egg but it isn’t – trust me..
Squeeze some lemon juice in with some powdered sugar – I
have no measurements for you- you will know when it’s right.
I know you will – the force is strong with this one…
So mix it together, eat it all, then mix up some more for the muffins.
Then spoon some over each of the warm muffins – Oh baby…
Now those are some sexy looking muffins!!!

Little Brown House Lemon Blueberry Muffins
2 cups all purpose flour
1/3 cup plus 2 Tablespoons sugar
1 Tablespoon baking powder
1 teaspoon salt
1 cup fresh or frozen blueberries, thawed
1 Tablespoon lemon zest
1 Tablespoon lemon juice
1 egg
1 cup milk
¼ cup butter, melted
In large bowl, combine the flour, sugar, baking powder, and salt. Add blueberries. In another bowl, beat egg, milk,lemon juice and zest – stir in butter, then stir into dry ingredients just until moistened. Fill greased or paper-lined muffin cups two thirds full
Bake at 400 degrees for 20 to 25 minutes.

Oh these looks yummo as Rachel Ray would say! Looks adorable on your cake stand you made! BTW after seeing your post about this I decided to make my Motherinlove one.
