Tasty Tuesday – Split Second Cookies

Yesterday was my birthday – the big one- the big FIVE OH…… Oh yeah..

So I am feeling kind of nostalgic today – thinking back over my life. By the way

-question.. how come when we are going to school

and supposedly being prepared for life, there are so many things about age that

no one tells us?? For instance – turkey necks and jowls… I wish I would have known

about them.. Not that there would be anything I could do, but at least I would KNOW..

I mean really – how much trouble would it be for someone to say – “Honey once you hit

forty be sure every picture you have taken of you is shot from above” That’s pretty easy, right?

They could have told me back here – at 2 years old. When I was learning about why

we put curlers in our hair and never wear horizontal stripes…

That is not what I wanted to share today.. But I think it was a necessary part of my

“over the hill” process..

Anyway -I was thinking about these cookies my Mom used to make. Buttery cookies

with jam in the center. They were called Split Seconds. Why they were called

this I do not know. So I decided to deviate from my traditional

self-medicating with chocolate, and try these out!

Here is the lineup of ingredients -

(I will post entire recipe at end)

You start out by mixing 2/3 cup of sugar with 3/4 cup softened butter.

Then add one egg and 1 teaspoon vanilla

Mix well. In another bowl, mix together 2 cups flour, 1/2 teaspoon salt,

and 1/2 teaspoon baking powder. Add this to sugar butter mixture and mix well.

Yummy!

My Mom made these by forming the dough into 4 logs and

making a hollow down the center of each log to fill with  jam.

I remember them falling apart easily, so I decided to try a different way.

I rolled them into little balls, then made a hole with my finger

in the center of each one.

Now comes the fun part! The jam.


I had some of my Mom’s strawberry jam, and

some huckleberry jam I had made last summer. Huckleberries grow all

around here in the Northwest – if you haven’t had them before, you should try

them, they are amazing!

For the first batch I added both jams to the cookies – the next batch

was all huckleberries. Raspberry jam was what my Mom used to use,

and it is great too!


These cook really fast when rolled in balls, so

watch them carefully – 350 degree’s for 7-10 minutes

Oh my – they are so good warm from the oven!!


I have been consoling myself for being “over the hill” with chocolate -

but I think these will work in a pinch too..if I continue to

console myself for much longer – I will be rolling down the hill..


Ok – you need to make these today and eat them all yourself..

Why? Because if all my BFF’s were just 10 pounds overweight – I would

feel so much better!! It’s not that much to ask is it?

Split Second Cookies

Ingredients

  • 3/4 cup butter, softened
  • 2/3 cup sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/3 cup raspberry jam

Directions

  1. In a large mixing bowl, cream butter and sugar until light and fluffy. Beat in egg and vanilla. Combine the flour, baking powder and salt; gradually add to creamed mixture and mix well
  2. Divide dough into four equal portions; shape each into a 12-in. x 3/4-in. log. Place 4 in. apart on two greased baking sheets. Make a 1/2-in. depression down center of logs; fill with jam.
  3. Bake at 350 degrees F for 15-20 minutes or until lightly browned. Cool for 2 minutes; cut diagonally into 3/4-in. slices. Remove to wire racks to cool completely.

    Oh I knew exactly what you were talking about when I saw your blog title today – I LOVE these cookies and they are SUCH a FOND memory from our childhood, I totally agree!! I usually make them the way Mother did, but your idea is very cute and probably isn’t quite as messy to eat. I have to wait until April 1st though to make them. I have a bet with my trainer that I can lose 10 pounds in the month of March. The loser has to wade into the lake chest-high and stand there a minute – brrrr – I am so NOT going into the water!!!

    Welcome to Foodie Friday! I can’t tell you how much I enjoyed reading your post. I turned 56 in October, and your words had me nodding and smiling and laughing. Oh, how well I know about those horizontals stripes and self-medicating with chocolate. Your mom’s recipe looks like the best kind of dessert/comfort food.
