Quick and Easy Taco Salad

Independence Day is behind us, it is time to sit back and enjoy the summer.

Any one else out there wonder when  the chance to sit back is coming??

Supposedly this is the time life slows down…not happening at my house! But I do enjoy a quick and easy

dinner recipe that doesn’t include heating up the house, and I thought you might

too. This is my tried and true go to salad when I am in a hurry but want something

good. I know everyone has a different way of making these,

this is mine and can be adjusted to suit your family.

Here is the cast of charactors -

I already had a green salad made – which put me way ahead in the quick catagory!

I try to make up a salad on the day I get groceries, and then use it through the week

as a side for dinners or for my work lunches.

Start by browning the ground beef and adding the taco seasoning to it.

One thing I have discovered now that I am buying my ground beef in the

grocery store again, the super extra lean does not work as well in this

kind of a recipe. It seems to be to dry, so I used one that had 10% fat and it

worked really well.

Add one can of drained kidney beans

One can of drained pitted small black olives

Grate about one cup of cheddar cheese

Add the warm seasoned meat to the salad

Then top with the grated cheese. I really love the way this salad mixes

up when the meat is warm, the cheese does a little bit of melting,

and the sauce spreads throughout the salad.

Mix it together thoroughly, then make the dressing.

My dressing is simply sour cream mixed with salsa

I use about a cup of sour cream and 1/2 cup of salsa – adjust to your taste.

Now all that is left to do is let each person put their serving together!

I always provide chips to mix in with it. Sometimes I just use tortilla

chips, but this time I had frito’s, which we love, so I used those.

Just load it all up on a plate, and take it out on the patio under the umbrella -

Not a hot meal, but not completely cold either – filling yet light – it is the perfect summertime meal!

If you decide to give this a try, I am sure you will like it.

You can add your own mix to the salad, more peppers and onions

if you want to spice to up a little. You could also add avacado or guacamole

alongside with the chips and dressing and let people choose their toppings.

    We love taco salad around here =) One thing we often do is use plain yogurt instead of sour cream. You can’t taste a difference and it’s healthier for you.
