Chocolate Chip Orange Biscotti
I finally got started on some Christmas Baking.. I seem to be behind on everything this year!
Except the eating.. I seem to be keeping up with that..
I make biscotti every year, but this year decided to try a new recipe.
I love it – and it is SUPER easy. That is a great combination in my book!
The list of ingredients is small and comprised of things you probably have in your house.
And here they are so nicely displayed against my ” Oh so 90′s” wallpaper border..
Dear Santa – please bring me an updated kitchen for the new year..
Start by beating together:
3 eggs
1/2 cup vegetable oil
1 cup white sugar
2 teaspoons vanilla
1-2 Tablespoon fresh squeezed orange juice
Speaking of Santa, I did get something nice already this year,
and that is this big powerful beauty of a Kitchenaid!
I got up really early on Black Friday to snag it, and was so excited when I got it.
The best part was it was online, so I was on my couch in my jammies doing my shopping!
(My spell check would really like me to substitute “James” for “jammies”
but I doubt my husband would like that.)
Now mix together:
3 1/4 cups all-purpose flour
1 Tablespoon Baking Powder
1 -2 Tablespoons Orange zest
Gradually add this to wet ingredients and mix-
The mixture will be stiff -
I am seriously so in love with this machine! It is a real workhorse, and makes things so much easier!
It bugs my husband a little that I sleep with it, but I am sure he will get used to that…
At this point I added some semi-sweet chocolate chips.. because it was the right thing to do.
I am not sure how much, because I just threw in a handful – lets just say 1 cup, shall we?
Now.. here is the point in the recipe where I should have separated this big blob of dough
into two pieces. Possibly, if I had bothered to look at a recipe, I wouldn’t have missed that step.
So – when YOU make this, divide this into two even pieces.
You will want to make TWO rolls like this, that are about 3 inches wide and 14 long.
And not nearly this thick..
Bake these in a 375 degree preheated oven for 25 minutes.
Can you say yum?
And Mammoth??
This was the point where I realized it was way bigger than it should have
been, and I had made a terrible error..
The next step is to cut diagonal slices off of the loaf, and put them back onto
the baking pan on their side. These then go back into the oven.
You bake for about 10 minutes on each side.
I watched mine very carefully and didn’t bake them quite that long.
I like biscotti that is crisp but not hard. And these were perfect!
These are golden brown and just right!
Now I took some vanilla candy melts, and put them in
a baggie into the microwave for a few seconds to melt.
You could also use chocolate or vanilla chips.
Cut a hole in the corner of the baggie, squeeze and drizzle over the top of the biscotti.
That is all there is to it! They freeze well and make great Christmas gifts-
give them along with a bag of Starbucks and a mug. Or just tie a cute ribbon around
a bundle of them and give them just as they are!
Be sure to keep some out for yourself. They are good dipped in coffee or tea,
but also good just by themselves. They are not overly sweet and the orange
taste mixed with the chocolate is so good!

Chocolate and orange…my favorite combo! But a close runner up is mint and chocolate so, Ice Cream? How did I miss that one? Can you tell me where to find that one? I’m sure to keep up with the Christmas Weight gain I must try them all! Is there a prize for that?
