Chocolate Cola Cake

Ok – I don’t care if it is 125 degrees where you are, you have to find a way to bake this cake…

I am afraid I will have to insist..

I found this cake through my newest passion – Pinterest. If you haven’t been there click on

the big red button in my sidebar to go check it out.

I saw a picture of this cake and when I noticed it was made with coke I was very intrigued.

I must confess I am a fan coke.. I can drink pepsi, but given a choice I will always go with coke.

Combine two of my favorite things, coke and chocolate, and I am all yours..

So I clicked on the picture and it took me to this blog –

Confessions Of A Chocoholic

She had me at Chocoholic..

Apparently it is a Southern tradition… You southerners have all the good traditions.

Up north we have traditions like wearing long johns under our skirts

and how to prepare elk and possum stew. See what I mean? No fun.

Here are the ingredients for the cake:

2 Cups Flour

2 Cups Sugar

1 Cup Butter

1/2 tsp. Salt

1 tsp. Baking Powder

1/2 tsp. Cinnamon

1/4 Cup Unsweetened Cocoa Powder

1 Cup Coca Cola

1/2 Cup Buttermilk

Begin by preheating your oven to 350 degrees and greasing a 9×13 cake pan.

Now you will combine all of the dry ingredients except the cocoa into a medium mixing bowl.

Next, in a medium saucepan over medium heat,

bring wet ingredients and cocoa to a boil.

Remove from heat.

Add liquid ingredients to dry mixture.

Mix in two eggs and 1 tsp. vanilla.

Pour into prepared pan and bake at 350 degrees for 30 minutes – do not overbake!

You will notice I had to finish off the coke- couldn’t let it go to waist.. I mean waste..

While cake is baking – mix the glaze in a saucepan.

1/2 cup butter

1/4 cup unsweetened cocoa

1/2 cup coca cola

Bring to a boil, then remove from stove and stir in 4 cups powdered sugar.

You can also add 1 cup chopped pecans at this point.

I didn’t have any on hand and refused to make another trip to the grocery store!

Pour it over the cake while both the glaze and the cake are still warm.

Then you might as well leave the house.. because you are going to want to

grab a spoon and just dig right in, and you really should let it sit for a few minutes.

But by all means eat it while it is still warm…but it is also good cold.. or at room temperature..

I am telling you, it is beyond amazing..

Even my husband agreed..

Too bad there won’t be any left for him tomorrow….

As a southerner, I can say I have enjoyed this cake for years. Try it with a scoop of vanilla ice cream……to die for. I agree with you about coke versus pepsi too. To the lady who asked….yes you can use diet coke but why bother?

Looks amazing…my family will think I’m ALL THAT! One question: the list of ingredients says 1cup coke. There is 1/2 cup in the glaze. Does the other 1/2 cup go somewhere else, or is that what you said you drank?
