Carrot Cupcakes.. and Zombies.

I have always loved carrot cake..  my family, however, does not share this taste.

Well, my daughters might, but my husband and son have a restraining order

against all forms of vegetables, except for french fries, hash browns, and mashed

potatoes. Which we all know are the pillars of a healthy nutrition chart.

So – I don’t often make carrot cake, as I would have to eat the entire thing by myself.

Oh trust me, I could do it… it would just turn my muffin top into the  Michelin tire man…

 

So when I saw this recipe for Carrot cupcakes with creme cheese frosting, I got slightly

excited. Ok, I may have even been giddy -

I need to get out more…

I was even super lazy and bough pre-shredded carrots! It made the process go much faster.

As you can see, I have my iPad in the background with a Netflix movie on.

I love to watch Netflix when I am working on projects. And here is another confession for you-

I love thriller movies… especially zombie ones.. I know, just one more thing to add to your list

of “the top 20 reasons I should stop reading The Little Brown House blog”  unless of course,

you are weird too….

Anyway, most of the things I have learned in life that have protected me thus far has come from

such movies. For instance – if you get a written message to meet someone somewhere dark and

scary and it says “come alone”, be sure you remember to bring your uncharged cell phone. It will

come in handy later.  Oh, and try to get someone to come with you, but only try one person and

then just leave a voicemail when you are unable to reach them. Or even better, just write a letter

informing the authorities about the bad guy you are meeting and drop it in the mail on your way,

that should give you some great bargaining power, especially with the speed of the US Postal service…..

Oh, and be sure you are wearing slinky low-cut pj’s… I am not sure why that last one is important

but it seems to be a common thread….

So – as you mix up the cupcake ingredients, press your flour covered fingers over the volume

control on your iPad – movies are way less scary without the sound.. then pour the batter into

a muffin pan and pop it into the oven at 400 degree’s for 20 minutes.

 

Yumm……………. this is one serving of vegetables, right?

But wait – there’s more! We still get to add the creme cheese frosting!

 

 

What could be better than creme cheese, lemon , zest, and sugar? Especially with screaming zombies

in the background – can life get any better than that?  Well, maybe by adding chocolate and shopping..

 

 

So there you go – your own little portion controlled piece of carrot cake heaven.

 

 

Now all you need is a cup of coffee and a scary movie!

And remember, if you hear a noise in the basement, be sure to go

investigate it… and bring along a flashlight with about 18 seconds

worth of battery life.  Zombies hate blinking lights….

    Yummy! Carrot cake reminds me of Fall-ish things…I guess it’s the color. You are braver than I am to watch scary movies…they just stay with me too much. Thanks for such a funny and informative blog post!

    You forgot to mention that when being chased, always run upstairs or into a dark alley (preferably one that’s a dead end). And I can confirm that at least one of your daughters likes carrot cake…as long as it is overflowing with cream cheese frosting ;)

    I will always and forever stick by my rule: Vegetables do not belong in desserts. i.e. carrot cake, zuchinni bread.

    And you forgot, if being chased by a crazy person, always run UPstairs, not out the opened front door.

    Love the carrot cupcakes, but even more your love of scary movies!! LOL I can not stand usually any type of horror movies, but have found myself hopelessly addicted to The Walking Dead! If you haven’t seen this series you have to!! Lots of gross zombies, I mean those FX guys went all out with this one! Will be coming back for more, you make me laugh every time!

    Yummy -I love carrot cake too esp the cream chese icing -I’ll have to try this recipe . I love scary movies -I;m still scard when I see black crows land one by one along a wire, a fence and esp if ithey would land on a climbing tower at a school ! -I’m sure you have seen Blair Witch project right? oh and last night my three teenage sons asked me ( yes me ) to ride along to see a haunted cemetary. –I did not get out of the car ( you probably guessed that) but fun all the same just hearing all the boys chatter with excitment.
